  • Coconut Milk: 1 can (13.66 ounces) – full-fat recommended
  • Fresh Strawberries, chopped: 1 pint (about 2 cups chopped), divided
  • Medium Banana, sliced: 1, ripe
  • Maple Syrup: 2 tablespoons (or to taste)

Equipment Needed:

  • 12 Freezer Pop Molds OR 12 Paper Cups (3 oz. each) + Wooden Pop Sticks + Foil

Instructions

Let’s make these easy and delicious Strawberry Banana Popsicles! They are so simple to put together. First, gather your ingredients and equipment.

In your blender, combine the can of coconut milk, 1 1/2 cups of the chopped strawberries (reserve the other 1/2 cup or so), the sliced ripe banana, and the 2 tablespoons of maple syrup.

Secure the lid on the blender. Process the mixture until it’s completely smooth and creamy. This might take 30 seconds to a minute, depending on your blender.

Next, take your popsicle molds or paper cups. Divide the remaining chopped strawberries evenly among the 12 molds or cups. Placing some fruit pieces directly in the molds ensures nice visible chunks in the finished popsicles.

Carefully pour the pureed strawberry-banana-coconut mixture from the blender into each mold or cup. Fill them about three-fourths full, leaving a little space at the top for expansion as they freeze.

If using popsicle molds, place the holder tops securely onto the molds according to their design. These usually have built-in sticks.

If using paper cups, cover the top of each cup tightly with a small square of aluminum foil. Make a small slit in the center of the foil with a sharp knife and insert a wooden popsicle stick through the slit into the liquid mixture. The foil holds the stick upright.

Carefully place the filled molds or cups upright in your freezer. Make sure they are level and won’t tip over.

Freeze until the popsicles are completely firm. This will take at least 4 hours, but freezing them longer (6 hours or overnight) is even better to ensure they are solidly frozen.

To unmold the popsicles, briefly run the outside of the mold (not the top opening!) under warm water for a few seconds. Gently pull on the stick or holder, and the popsicle should release easily. Enjoy immediately!
