Description

This recipe, “Tofu Scramble,” offers a plant-based alternative to scrambled eggs, using crumbled tofu as the base and a blend of spices to mimic the flavor and texture of the classic breakfast dish.


Ingredients

  • 1 block firm tofu, drained and crumbled
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 cup spinach
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tbsp nutritional yeast
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

 

  1. Prepare Tofu: Drain the tofu and press it to remove excess water. You can do this by wrapping the tofu in paper towels or a clean kitchen towel and placing a heavy object on top for 15-20 minutes. Then, crumble the tofu into small, bite-sized pieces.

  2. Sauté Vegetables: In a large pan, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.

  3. Add Tofu and Spices: Add the crumbled tofu, turmeric, cumin, nutritional yeast, salt, and pepper to the pan. Stir well to combine.

  4. Cook Tofu: Cook for another 5-7 minutes, or until the tofu is heated through and slightly browned, stirring occasionally.

  5. Add Spinach: Add the spinach to the pan and cook until wilted, about 2 minutes, stirring constantly.

  6. Serve: Serve the tofu scramble hot, optionally with toast, avocado slices, salsa, hot sauce, or your favorite toppings.
