Description

This recipe, “Vegan BBQ Jackfruit Sandwich,” offers a plant-based take on the classic pulled pork sandwich, using young green jackfruit as a surprisingly convincing meat substitute

Ingredients

Scale

  • 1 can young green jackfruit in brine, drained and rinsed
  • 1 cup BBQ sauce
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 4 sandwich buns
  • Coleslaw (optional) for serving

Instructions

  1. Sauté Onion and Garlic: In a large pan, heat the olive oil over medium heat. Add the thinly sliced onion and minced garlic, and sauté until softened, about 5 minutes.

  2. Add Jackfruit: Add the drained and rinsed jackfruit to the pan.

  3. Cook and Shred Jackfruit: Cook for another 5 minutes, breaking it apart with a fork to create a shredded texture, similar to pulled pork.

  4. Add BBQ Sauce: Pour the BBQ sauce over the jackfruit and stir to combine.

  5. Simmer: Cook for another 10 minutes, or until the jackfruit is tender and well-coated with the sauce.

  6. Toast Buns (Optional): Toast the sandwich buns if desired.

  7. Assemble Sandwiches: Serve the BBQ jackfruit on the toasted buns, optionally topped with coleslaw.

  8. Serve: Enjoy!
