For the Skillet:

  • 1 teaspoon olive oil

  • 1 pound ground beef

  • 1 cup salsa sauce

  • 6 medium eggs

Optional Garnish:

  • Chopped green onions or fresh cilantro


Instructions

Take out a large skillet and heat the olive oil over medium-high heat.

Add the ground beef to the skillet, breaking it apart with a spatula as it cooks. Stir occasionally and cook until the beef is no longer pink, about 5–6 minutes.

Once the beef is fully cooked, pour in the salsa sauce. Stir everything together and let it simmer for another 2–3 minutes, allowing the flavors to blend and the mixture to heat through.

Crack the eggs directly on top of the beef and salsa mixture. Try to space them out evenly across the skillet.

Cover the skillet with a lid and let the eggs cook for about 6–7 minutes, or until they reach your desired level of doneness.

Remove the skillet from the heat and garnish with chopped green onions or fresh cilantro if you like a little extra freshness.
