When I first made this Banana Cottage Cheese Ice Cream, I was looking for a healthy, creamy treat that captured the natural sweetness of bananas.


Ingredients

2 cups cottage cheese
2 ripe bananas
1/2 cup honey or maple syrup
1 teaspoon vanilla extract


Instructions

To Prepare the Ice Cream Base
Step 1: Peel the ripe bananas and slice them into chunks

Step 2: Add the banana chunks, cottage cheese, honey or maple syrup, and vanilla extract to a high-powered blender or food processor

Step 3: Blend on high speed until the mixture is completely smooth and creamy

Step 4: Scrape down the sides of the blender as needed to ensure everything is well incorporated

To Freeze the Ice Cream
Step 5: Pour the blended banana mixture into a shallow, freezer-safe dish

Step 6: Spread the mixture evenly using a spatula

Step 7: Place the dish in the freezer

Step 8: Every 30 minutes, stir the mixture with a fork or spoon to break up any ice crystals and maintain a creamy texture

Step 9: Continue freezing and stirring for 1–2 hours, or until the ice cream is firm but scoopable

To Serve
Step 10: Let the ice cream sit at room temperature for a few minutes to soften slightly before scooping

Step 11: Scoop into bowls, cones, or enjoy straight from the dish

Step 12: Store any remaining ice cream in an airtight container in the freezer for up to 2 weeks
