Description

When I first made this Blueberry Cottage Cheese Ice Cream, I was craving a dessert that was refreshing, vibrant, and packed with real fruit flavor


Ingredients

Scale

2 cups cottage cheese
1 cup fresh or frozen blueberries
1/2 cup honey or maple syrup
1 teaspoon lemon juice


Instructions

To Prepare the Ice Cream Base
Step 1: Place the cottage cheese, blueberries, honey or maple syrup, and lemon juice into a high-powered blender or food processor

Step 2: Blend on high speed until the mixture is completely smooth and creamy

Step 3: Scrape down the sides of the blender as needed to ensure all ingredients are fully combined

To Freeze the Ice Cream
Step 4: Pour the smooth blueberry mixture into a shallow, freezer-safe dish

Step 5: Use a spatula to spread the mixture out evenly

Step 6: Place the dish into the freezer

Step 7: Every 30 minutes, stir the mixture with a fork or spoon to break up any ice crystals and maintain a creamy texture

Step 8: Continue freezing and stirring for 1–2 hours, or until the ice cream is firm but scoopable

To Serve
Step 9: Let the ice cream sit at room temperature for a few minutes to soften before scooping

Step 10: Scoop into bowls or cones and enjoy immediately

 

Step 11: Store any remaining ice cream in an airtight container in the freezer for up to 2 weeks
