For the Chicken Casserole:

  • 1 tablespoon olive oil

  • 2 large chicken breasts

  • Salt and black pepper, to taste

  • 1 tablespoon Italian seasoning

  • 2 cups broccoli florets, blanched and chopped

  • 6 strips bacon, cooked and chopped

  • â…“ cup mozzarella cheese, shredded

  • 1 cup cheddar cheese, shredded


Instructions

Preheat the oven to 400°F. Lightly grease a casserole dish with olive oil.

Take your chicken breasts and slice them in half horizontally to make four thinner pieces. This helps them cook faster and more evenly.

Arrange the chicken slices in the bottom of the greased dish. Season both sides with salt, black pepper, and Italian seasoning.

Top the chicken evenly with chopped broccoli, followed by the chopped cooked bacon.

Sprinkle shredded mozzarella and cheddar cheese over the entire dish.

Bake uncovered in the preheated oven for 20–25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.

 

Let the dish rest for 5 minutes before serving. This allows the cheese to set slightly and makes everything easier to serve.
