Tender chicken breasts are seasoned with Cajun spices, baked over sweet peppers, and topped with melty cream cheese and cheddar


Ingredients

For the Chicken and Peppers:

  • 2 long sweet peppers, thinly sliced

  • 4 small chicken breasts

  • 1 teaspoon smoked paprika

  • 1 teaspoon onion powder

  • ¼ teaspoon cayenne pepper

  • ½ teaspoon oregano

  • ¼ teaspoon salt

  • â…› teaspoon black pepper

  • 6 cloves garlic, minced

For the Creamy Topping:

  • 1 cup cream cheese

  • ½ cup cheddar cheese, shredded


Instructions

Step 1:
Preheat your oven to 375°F.
Spray a large baking dish lightly with cooking spray or a little oil.

Step 2:
Spread the thinly sliced sweet peppers evenly across the bottom of the baking dish.

Step 3:
Place the chicken breasts on top of the peppers in a single layer.

Step 4:
In a small bowl, mix together the smoked paprika, onion powder, cayenne pepper, oregano, salt, and black pepper.

Step 5:
Sprinkle the spice mixture evenly over both sides of the chicken breasts.

Step 6:
Rub the minced garlic into the chicken breasts as well, making sure every piece is well seasoned and flavorful.

Step 7:
Top each chicken breast with about 2 tablespoons of cream cheese.
Spread it slightly with the back of a spoon to coat the top.

Step 8:
Sprinkle the entire baking dish with shredded cheddar cheese.

Step 9:
Bake uncovered in the preheated oven for 25-30 minutes until the chicken is cooked through (internal temperature should reach 165°F).

Step 10:
Switch the oven to broil and broil for 2 minutes to golden and bubble the cheese on top.

Step 11:
Serve hot, spooning some of the roasted peppers over the chicken for extra flavor and color.
