Description

When I created this Chicken Fajita Bowl recipe, I wanted something that delivered bold, sizzling flavor without the fuss of traditional fajitas. I needed a meal that was hearty, vibrant, and easy enough to make even on my busiest nights.


Ingredients

Scale

1 lb chicken breast, sliced thinly
1 bell pepper, sliced
1 onion, sliced
2 teaspoons fajita seasoning
2 cups cooked rice

For Garnish
Salsa
Guacamole
Chopped cilantro
Sour cream


Instructions

Step 1: Slice the chicken breast, bell pepper, and onion into thin, even strips

Step 2: Heat a large skillet over medium-high heat and add a drizzle of oil

Step 3: Add the chicken to the skillet and sprinkle with fajita seasoning, cooking for 4-6 minutes until browned and cooked through

Step 4: Remove the chicken from the skillet and set aside, then add the sliced peppers and onions to the skillet

Step 5: Sauté the vegetables for 3-5 minutes until they are tender and slightly caramelized

Step 6: While the chicken and veggies cook, warm the cooked rice if needed

Step 7: To assemble the bowls, place a generous scoop of rice at the bottom of each bowl

Step 8: Top with cooked chicken, sautéed vegetables, and your favorite garnishes like salsa, guacamole, cilantro, and sour cream
