This Chicken Mozzarella Bake is tender, juicy, and loaded with cheesy goodness. Seasoned chicken breasts are baked in a rich tomato sauce and topped with melted mozzarella — the ultimate easy comfort food dinner.
Ingredients
Chicken:

4 small boneless, skinless chicken breasts (thin or pounded out)

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon Italian seasoning

Salt and black pepper, to taste

2 tablespoons extra virgin olive oil
Tomato Sauce:

1 can (16 oz) chopped tomatoes

3 garlic cloves, minced

½ red onion, finely chopped
-
2 teaspoons oregano
-
Salt and black pepper, to taste
Topping and Garnish:

1 cup grated mozzarella cheese
-
A few fresh basil leaves, chopped for garnish
Instructions
Preheat the oven to 375°F. Grease a baking dish lightly with olive oil.
Take your chicken breasts and, if needed, pound them out to make them thinner. This helps them cook evenly and soak up all the flavors.
On a cutting board, make shallow cuts across one side of each chicken breast without slicing all the way through. These cuts will help the seasonings penetrate deeper into the meat.
Flip the chicken breasts over and sprinkle with half the garlic powder, onion powder, Italian seasoning, salt, and black pepper. Rub the seasonings into the meat to ensure they stick well.
Place the chicken into the prepared baking dish, cut-side up. Sprinkle the remaining seasoning mixture over the exposed side, then drizzle with olive oil.
Use your fingers or a brush to rub the oil and seasoning all over the chicken, especially into the cuts you made earlier.
In a small bowl, mix together the chopped tomatoes, minced garlic, chopped red onion, oregano, salt, and black pepper. This will be your simple, fresh tomato sauce.
Spoon the tomato sauce evenly over the chicken breasts, making sure each one is well coated.
Sprinkle the grated mozzarella cheese generously over the top of the chicken and sauce.
Bake uncovered in the preheated oven for 25–30 minutes, until the chicken is cooked through and the cheese is melted and bubbling.
Broil for 2 minutes at the end to create a beautifully golden top, but keep a close eye on it so it doesn’t burn.
Remove from the oven and garnish with chopped fresh basil before serving.
