Description

When I first created this Coconut Cottage Cheese Mousse, I was dreaming of something tropical, creamy, and refreshing — but light enough to enjoy any time of day


Ingredients

Scale

2 cups cottage cheese
1/4 cup coconut milk
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
Shredded coconut for garnish


Instructions

Step 1: Add the cottage cheese, coconut milk, honey or maple syrup, and vanilla extract to a high-speed blender or food processor
Step 2: Blend on high for 1–2 minutes until completely smooth and creamy
Step 3: Scrape down the sides as needed to ensure all ingredients are fully incorporated
Step 4: Taste the mixture and adjust sweetness or vanilla if desired

To Assemble and Chill
Step 5: Spoon the mousse into four small glasses, ramekins, or jars
Step 6: Smooth the tops for a clean presentation
Step 7: Cover and refrigerate for at least 1 hour to allow the mousse to chill and set

To Serve
Step 8: Garnish each portion with shredded coconut just before serving
Step 9: Serve chilled as a light dessert or tropical treat
Step 10: Store leftovers covered in the fridge for up to 3 days
