Description

This Cottage Cheese Pasta is creamy, hearty, and loaded with protein!
An easy and satisfying pasta dinner made with rigatoni, chicken mince, marinara, and a surprising cottage cheese twist for extra creaminess.


Ingredients

For the Pasta and Sauce:

  • 3 cups uncooked rigatoni pasta

  • 1 tablespoon olive oil

  • 1 medium yellow onion, chopped

  • 4 garlic cloves, minced

  • 1 pound chicken mince (ground chicken)

  • 2 teaspoons Italian seasoning

  • A pinch of red pepper flakes (optional)

  • 1 (24 oz) jar marinara sauce

  • ½ cup cottage cheese

  • Salt and black pepper, to taste

For Garnish:

  • Grated Parmesan cheese

  • Fresh basil


Instructions

Step 1:
Bring a large pot of salted water to a boil.
Cook the rigatoni pasta according to package instructions until al dente.
Drain and set aside.

Step 2:
While the pasta cooks, heat olive oil in a large skillet over medium-high heat.
Add the chopped onion and sauté for 4-5 minutes until softened and translucent.

Step 3:
Add the minced garlic to the skillet and cook for 30 seconds until fragrant.

Step 4:
Add the chicken mince to the skillet.
Sprinkle in the Italian seasoning, red pepper flakes if using, and a little salt and black pepper.

Step 5:
Use a spatula to break up the chicken mince, mixing it with the onions, garlic, and seasonings.
Cook for about 6-8 minutes until fully cooked and no longer pink.

Step 6:
While the chicken cooks, blend the marinara sauce and cottage cheese together until smooth and creamy.

Step 7:
Once the chicken is cooked, pour the blended sauce into the skillet with the chicken mixture.

Step 8:
Add the cooked rigatoni pasta to the skillet.
Stir everything together until the pasta is coated in the creamy sauce.

Step 9:
Let the mixture simmer for 2-3 minutes to heat everything through and allow the flavors to meld.

 

Step 10:
Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.
