When I first made this Cottage Cheese & Peanut Butter Snickers Dessert, I was aiming for something rich, chocolatey, and peanut buttery — like a Snickers bar — but in a healthier, spoonable form.
Ingredients
16 ounces cottage cheese (about 2 cups)
1/3 cup creamy peanut butter (unsweetened)
1/3 cup honey or maple syrup
1/3 cup chocolate chips (or chopped chocolate bar)
1/3 cup roasted peanuts (chopped)
Optional: small spoonful of ghee or coconut oil to smooth melted chocolate
Instructions
To Prepare the Creamy Base
Step 1: In a medium bowl, add the cottage cheese, peanut butter, and honey
Step 2: Using an immersion blender (or food processor), blend until completely smooth and creamy
Step 3: Taste the mixture and adjust sweetness or peanut butter as needed
Step 4: Evenly divide the mixture into four dessert glasses or ramekins
To Melt and Layer the Chocolate
Step 5: In a microwave-safe bowl, heat chocolate chips in 20-second intervals, stirring between each round, until smooth
Step 6: If the chocolate is too thick, add a small spoonful of ghee or coconut oil to thin it
Step 7: Spoon or drizzle the melted chocolate over the top of each mousse cup
To Garnish and Chill
Step 8: Sprinkle chopped peanuts over the chocolate while it’s still soft
Step 9: Place the dessert cups in the refrigerator and chill for at least 30 minutes before serving
Step 10: Enjoy chilled — store leftovers in an airtight container for up to 3 days
