Description

When I first made this Cottage Cheese Raspberry Mousse, I was searching for a dessert that was light, fruity, and elegant — but also quick and wholesome


Ingredients

Scale

2 cups cottage cheese
1 cup fresh raspberries
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
Fresh raspberries and mint leaves for garnish


Instructions

To Prepare the Mousse
Step 1: In a blender or food processor, combine cottage cheese, raspberries, honey or maple syrup, and vanilla extract
Step 2: Blend on high speed until the mixture is completely smooth and creamy, about 1–2 minutes
Step 3: Scrape down the sides of the blender as needed to make sure everything is fully incorporated
Step 4: (Optional) For a smoother finish, strain the mixture through a fine-mesh sieve to remove raspberry seeds

To Assemble and Chill
Step 5: Spoon the mousse evenly into four small serving glasses or ramekins
Step 6: Smooth the tops with a spoon or spatula for a clean look
Step 7: Cover and chill in the refrigerator for at least 1 hour to allow the mousse to set and the flavors to meld

 

To Serve
Step 8: Garnish each serving with a few fresh raspberries and a small sprig of mint
Step 9: Serve chilled as a refreshing dessert or mid-day treat
Step 10: Store any leftovers in the fridge, covered, for up to 2 days
