When I first made this Cottage Cheese Vanilla Mousse, I was in the mood for something creamy and comforting — the kind of dessert that feels like a warm hug, even when served cold


Ingredients

Scale

2 cups cottage cheese
1/4 cup honey or maple syrup
2 teaspoons vanilla extract
1/2 teaspoon almond extract (optional)
Fresh berries or chocolate shavings for garnish


Instructions

To Prepare the Mousse
Step 1: Add the cottage cheese, honey or maple syrup, vanilla extract, and almond extract (if using) to a blender or food processor
Step 2: Blend on high speed for 1–2 minutes until completely smooth and creamy
Step 3: Scrape down the sides with a spatula as needed to ensure everything is well incorporated
Step 4: Taste and adjust sweetness or vanilla to your preference

To Assemble and Chill
Step 5: Spoon the mousse evenly into four small serving glasses, jars, or ramekins
Step 6: Smooth the tops for a clean presentation
Step 7: Cover and refrigerate for at least 1 hour to allow the mousse to chill and set

To Serve
Step 8: Just before serving, garnish with fresh berries or a sprinkle of chocolate shavings
Step 9: Serve chilled as a light dessert or elegant snack
Step 10: Store leftovers in the fridge, covered, for up to 3 days
