When I first made this Easy Chicken Salad Recipe, I was looking for a simple, fresh meal that could come together quickly with everyday ingredients.
Ingredients
For the Chicken Salad
1/2 cup plain Greek yogurt or mayonnaise
1/4 teaspoon garlic powder (or to taste)
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
2 cups cooked chicken, shredded or chopped
1/2 cup chopped celery
1/2 cup chopped pecans, walnuts, or sliced almonds (toasted if desired)
1/2 cup quartered grapes
1/4 cup finely chopped red onion (optional)
Bread, croissants, or lettuce, for serving
Instructions
Step 1: In a large mixing bowl, stir together the plain Greek yogurt, garlic powder, salt, and black pepper
Step 2: Add the cooked, shredded or chopped chicken to the bowl
Step 3: Add the chopped celery, nuts, grapes, and red onion (if using) to the bowl
Step 4: Stir everything together gently until well combined
Step 5: Taste the chicken salad and adjust the seasonings if needed, adding more salt, pepper, or garlic powder to your preference
Step 6: Serve the chicken salad as a sandwich on bread or croissants, spooned over a bed of lettuce, or wrapped in tortillas or lettuce wraps
Step 7: Store any leftovers in an airtight container in the refrigerator for up to three days
