Healthy Greek Chicken Bowls

Description

Make fresh and delicious Healthy Greek Chicken Bowls at home with tender marinated chicken, crisp veggies, rice, and homemade tzatziki.
This easy, healthy recipe is perfect for meal prep, busy weeknights, or light summer dinners.


Ingredients

For the Chicken:

  • pounds small chicken breasts (about 4)

  • ¼ cup olive oil

  • 2 tablespoons honey

  • 2 tablespoons lemon juice

  • 1 tablespoon lemon zest

  • 1½ teaspoons dried oregano

  • 1½ teaspoons dried basil

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

  • ½ teaspoon red pepper flakes (optional)

  • ¼ teaspoon black pepper

For the Bowl Filling:

  • 4 cups romaine lettuce, shredded

  • 2 cups cherry tomatoes, halved

  • 2 cups cucumber, diced

  • 2 cups cooked white rice

  • 1 cup red onion, thinly sliced

  • ½ cup feta cheese, optional

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt (or low-fat sour cream)

  • ½ cup cucumber, grated

  • 1 tablespoon fresh dill, finely chopped

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon minced garlic

  • ¼ teaspoon salt, or to taste


Instructions

Step 1:
Whisk together all the ingredients for the chicken marinade in a bowl.
Pound the chicken breasts to about ½ inch thick for even cooking.
Place the chicken in the marinade and let it sit for at least 30 minutes or up to a few hours.

Step 2:
While the chicken is marinating, prepare the tzatziki sauce.
Combine the Greek yogurt, grated cucumber, dill, olive oil, lemon juice, garlic, and salt in a small bowl.
Mix well and refrigerate until ready to use.

Step 3:
Cook the rice according to package instructions if you haven’t already.
Chop the romaine lettuce, halve the cherry tomatoes, dice the cucumbers, and slice the red onion.
Set all your toppings aside for easy assembly later.

Step 4:
After marinating, preheat your air fryer to 380°F.
Place the chicken inside and cook for about 7 minutes on one side.
Flip and cook for another 3-4 minutes, or until the internal temperature reaches 165°F.

Step 5:
If you don’t have an air fryer, heat a skillet over medium-low heat with a bit of oil or butter.
Cook the chicken for 7-8 minutes on the first side, then flip and cook until golden and fully cooked.
Let the chicken rest for 5 minutes before slicing.

Step 6:
To assemble the bowls, start with a base of white rice.
Add shredded lettuce, tomatoes, cucumber, and red onion.
Top with sliced chicken and a generous spoonful of tzatziki sauce.

 

Step 7:
Sprinkle with crumbled feta if using, and finish with a drizzle of olive oil and a squeeze of fresh lemon juice.
Serve immediately and enjoy every fresh, flavorful bite.
