Description

This Keto Jalapeño Popper Casserole is a rich, creamy, and low-carb dinner favorite!
Tender chicken, spicy jalapeños, melty cheese, and crispy bacon combine for the ultimate keto comfort food in one easy dish.


Ingredients

For the Casserole:

  • 4 boneless, skinless chicken breasts, cubed

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • Salt and black pepper, to taste

  • 8 oz cream cheese

  • ½ cup heavy cream

  • 5 jalapeño peppers, seeded and diced

  • 2 cups mature cheddar cheese, shredded

For the Topping:

  • 6 slices bacon, cooked and chopped


Instructions

Step 1:
Preheat your oven to 375°F.
Lightly spray a 9×13 casserole dish with oil.

Step 2:
Place the cubed chicken breasts in the bottom of the casserole dish.
Season generously with garlic powder, onion powder, salt, and black pepper.

Step 3:
Mix the chicken around to coat it well with all the seasonings.

Step 4:
Add the cream cheese and heavy cream to the casserole dish.
Mix as much as possible to coat the chicken evenly — it will melt and spread beautifully while baking.

Step 5:
Sprinkle the diced jalapeños evenly over the chicken mixture.

Step 6:
Top everything with the shredded mature cheddar cheese.

Step 7:
Bake uncovered for 40-45 minutes until the chicken is fully cooked through and the casserole is bubbling.

Step 8:
Remove from the oven and sprinkle the cooked, chopped bacon over the top.

 

Step 9:
Serve hot and enjoy the creamy, cheesy, spicy goodness!
