Ingredients
2 cups cottage cheese
1/4 cup honey or maple syrup
1/4 cup fresh lemon juice
1 tablespoon lemon zest
Fresh berries or mint leaves for garnish
Instructions
To Prepare the Mousse
Step 1: Add the cottage cheese, honey or maple syrup, fresh lemon juice, and lemon zest to a high-powered blender or food processor
Step 2: Blend on high speed for 1–2 minutes until the mixture is completely smooth and creamy
Step 3: Scrape down the sides of the blender with a spatula to make sure all ingredients are incorporated
Step 4: Taste the mousse and adjust sweetness or lemon intensity to your preference
To Assemble and Chill
Step 5: Spoon the mousse evenly into four small serving glasses or ramekins
Step 6: Smooth the tops for a clean finish
Step 7: Cover and refrigerate for at least 1 hour to allow the mousse to set and the flavors to develop
To Serve
Step 8: Garnish each mousse with a few fresh berries or a sprig of mint before serving
