Description

When I first thought about creating this Orange Cottage Cheese Ice Cream, I wanted something that was both refreshing and creamy — a frozen treat that reminded me of a classic creamsicle, but made with real, nourishing ingredients


Ingredients

Scale

2 cups cottage cheese
1/2 cup orange juice (freshly squeezed)
Zest of 1 orange
1/2 cup honey or maple syrup


Instructions

To Prepare the Ice Cream Base
Step 1: Zest one orange and squeeze it to extract 1/2 cup of juice
Step 2: Add the cottage cheese, orange juice, orange zest, and honey or maple syrup to a high-powered blender or food processor
Step 3: Blend on high speed until the mixture is completely smooth and creamy
Step 4: Scrape down the sides of the blender as needed to ensure all ingredients are well combined

To Freeze the Ice Cream
Step 5: Pour the smooth orange mixture into a shallow, freezer-safe dish
Step 6: Spread it evenly using a spatula
Step 7: Place the dish in the freezer
Step 8: Every 30 minutes, stir the mixture with a fork or spoon to break up ice crystals and maintain a creamy texture
Step 9: Continue freezing and stirring for 1–2 hours, or until firm but scoopable

To Serve
Step 10: Let the ice cream sit at room temperature for a few minutes before scooping
Step 11: Scoop into bowls, cones, or enjoy straight from the dish
Step 12: Store leftovers in an airtight container in the freezer for up to 2 weeks
