Description

When I first made this Peach Cottage Cheese Ice Cream, I was searching for a dessert that captured the essence of summer — sweet, juicy, and refreshing


Ingredients

Scale

2 cups cottage cheese
1 cup fresh peaches, peeled and sliced
1/2 cup honey or maple syrup
1 teaspoon vanilla extract


Instructions

Step 1: Peel and slice the fresh peaches, removing the pits

Step 2: Add the cottage cheese, sliced peaches, honey or maple syrup, and vanilla extract to a high-powered blender or food processor

Step 3: Blend on high speed until the mixture is completely smooth and creamy

Step 4: Scrape down the sides of the blender as needed to ensure everything is fully incorporated

To Freeze the Ice Cream
Step 5: Pour the blended peach mixture into a shallow, freezer-safe dish

Step 6: Use a spatula to spread the mixture evenly

Step 7: Place the dish into the freezer

Step 8: Every 30 minutes, stir the mixture with a fork or spoon to break up any ice crystals and maintain a creamy texture

Step 9: Continue freezing and stirring for 1–2 hours, or until firm but scoopable

To Serve
Step 10: Let the ice cream sit at room temperature for a few minutes to soften before scooping

Step 11: Scoop into bowls, cones, or enjoy straight from the dish

 

Step 12: Store any remaining ice cream in an airtight container in the freezer for up to 2 weeks
