Description

When I first made this Peanut Butter Cottage Cheese Mousse, I was aiming for something rich, creamy, and satisfying — but without any refined sugar or heavy cream


Ingredients

Scale

2 cups cottage cheese
1/2 cup peanut butter (creamy or chunky)
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
Chopped peanuts or chocolate chips for garnish


Instructions

Step 1: Add the cottage cheese, peanut butter, honey or maple syrup, and vanilla extract to a high-powered blender or food processor
Step 2: Blend on high speed until the mixture is completely smooth and creamy, scraping down the sides as needed
Step 3: Taste the mixture and adjust the sweetness to your liking — add a little more honey or vanilla if desired
Step 4: Once smooth, spoon the mousse evenly into four small serving glasses, jars, or ramekins

To Chill and Garnish
Step 5: Cover and refrigerate for at least 1 hour to let the mousse set and flavors meld
Step 6: Just before serving, top each portion with chopped peanuts, chocolate chips, or a drizzle of peanut butter
Step 7: Serve chilled for the best texture and flavor

To Store
Step 8: Store leftovers in an airtight container in the refrigerator for up to 3 days
Step 9: Do not freeze, as freezing will affect the mousse’s creamy texture
