Description

This Pineapple BBQ Chicken with Bacon is a sweet, smoky, and cheesy baked chicken dish!
Juicy chicken breasts are layered with BBQ sauce, pineapple, bacon, and mozzarella for a flavor-packed dinner that’s quick and easy to make.


Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (thinner cuts preferred)

  • Salt and black pepper, to taste

  • 1 cup low-sugar BBQ sauce

  • 1 cup diced pineapple

  • 6 strips bacon, cooked and diced

  • ¼ red onion, thinly sliced

  • 1 cup shredded mozzarella cheese

For Topping:

  • Extra diced pineapple

  • Green onions, diced


Instructions

Step 1:
Preheat your oven to 400°F.
Lightly spray a baking dish with cooking oil.

Step 2:
Place the chicken breasts in a single layer in the prepared baking dish.
Season both sides with salt and black pepper.

Step 3:
Spoon the BBQ sauce evenly over the chicken, spreading it to coat.

Step 4:
Scatter the diced pineapple evenly over the top of the sauced chicken.

Step 5:
Sprinkle the cooked, diced bacon and sliced red onions over everything.

Step 6:
Top the entire dish with the shredded mozzarella cheese.

Step 7:
Bake uncovered for 25-30 minutes, until the chicken is fully cooked and the cheese is bubbly and golden.

Step 8:
For an extra cheesy, golden finish, broil the casserole for 3-4 minutes at the end.

 

Step 9:
Top with extra diced pineapple and green onions before serving.
