When I first created this Pumpkin Cottage Cheese Mousse, I wanted something that captured the cozy, spiced feeling of fall — but with a light and nourishing twist
Ingredients
2 cups cottage cheese
1 cup pumpkin puree
1/4 cup honey or maple syrup
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
Whipped cream and ground cinnamon for garnish
Instructions
To Prepare the Mousse
Step 1: Add the cottage cheese, pumpkin puree, honey or maple syrup, pumpkin pie spice, and vanilla extract to a high-powered blender or food processor
Step 2: Blend on high speed until the mixture is smooth, creamy, and well combined
Step 3: Scrape down the sides of the blender as needed to ensure everything is fully incorporated
Step 4: Taste and adjust sweetness or spice to your preference
To Assemble and Chill
Step 5: Spoon the mousse evenly into four small serving glasses, jars, or ramekins
Step 6: Smooth the tops for a clean, elegant finish
Step 7: Cover and refrigerate for at least 1 hour to allow the mousse to chill and set
To Serve
Step 8: Top each mousse with a swirl of whipped cream and a sprinkle of ground cinnamon
Step 9: Serve chilled as a refreshing fall dessert or snack
Step 10: Store any leftovers in the refrigerator, covered, for up to 3 days
