Description

Make this easy and vibrant Salsa Fresca Chicken Bake packed with juicy chicken, fresh salsa, and melted cheese!
It’s a healthy, low-carb dinner that’s full of flavor and ready in under 40 minutes.


Ingredients

For the Tomato Mix:

  • 2 cups cherry tomatoes, diced

  • 1 medium white onion, chopped

  • 1 large jalapeño, chopped

  • A bunch of cilantro, chopped

  • ½ lime, juiced

  • ½ teaspoon salt, divided

For the Chicken:

 

  • 2 pounds chicken breast, boneless and skinless, diced

  • ½ teaspoon cumin

  • 1 teaspoon paprika powder

  • 1 tablespoon garlic powder

  • ¼ teaspoon red chili pepper flakes

  • ¼ teaspoon black pepper

  • 1 cup shredded mozzarella cheese


Instructions

Step 1:
Preheat your oven to 400°F.
Spray a 9×13 casserole dish lightly with oil and set aside.

Step 2:
In a large bowl, combine the diced cherry tomatoes, chopped onion, chopped jalapeño, chopped cilantro, lime juice, and ¼ teaspoon salt.
Toss gently to combine and set aside to let the flavors meld.

Step 3:
Spread the diced chicken breast evenly across the bottom of the prepared casserole dish.
Season with cumin, paprika, garlic powder, red chili flakes, black pepper, and the remaining ¼ teaspoon salt.
Toss gently to coat all the chicken pieces with the seasoning.

Step 4:
Spoon the fresh tomato salsa mixture evenly over the seasoned chicken.
Try to distribute it so every piece of chicken gets some juicy salsa.

Step 5:
Sprinkle the shredded mozzarella cheese evenly over the top of the salsa-covered chicken.

Step 6:
Bake uncovered for 25-30 minutes until the chicken is fully cooked and the cheese is melted and bubbling.
You’ll know it’s done when the chicken reaches 165°F internally and the dish smells absolutely heavenly.

Step 7:
Garnish with extra fresh cilantro before serving for a burst of color and flavor.

 

Step 8:
Serve hot and enjoy the juicy, cheesy goodness with every forkful
