There’s something so satisfying about a sizzling plate of fajitas. The aroma of seasoned chicken and peppers is enough to make anyone’s mouth water. But what if you could get all that flavor without standing over a stove?
Ingredients
1.5 lbs boneless, skinless chicken breasts
1 bell pepper (red, yellow, or green), sliced
1 onion, sliced
3 cloves garlic, minced
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
Salt and pepper, to taste
Juice of 1 lime
Tortillas, for serving
Optional toppings: avocado, salsa, sour cream, cilantro
Instructions
Step 1: Load the Slow Cooker
Place the chicken breasts in the bottom of the slow cooker.
Add the sliced bell pepper, onion, and minced garlic on top.
Step 2: Add Spices and Lime
Sprinkle the chili powder, cumin, paprika, salt, and pepper evenly over the chicken and vegetables.
Squeeze the juice of one fresh lime over everything.
Step 3: Stir and Cover
Use a spoon or your hands to gently stir and coat the chicken in the seasoning.
Cover the slow cooker with the lid.
Step 4: Cook Low and Slow
Cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender.
Avoid lifting the lid too often to keep the heat in.
Step 5: Shred and Serve
Remove the chicken from the slow cooker and shred it with two forks.
Return the shredded chicken to the pot and mix it with the vegetables and sauce.
Serve hot in warm tortillas with your favorite toppings.
