Sometimes, all I want at the end of a busy day is a bright, comforting meal that practically cooks itself. That’s where this Slow Cooker Lemon Garlic Chicken comes in. It’s fresh, flavorful, and ridiculously easy to throw together.


Ingredients

Scale

4 boneless, skinless chicken breasts
¼ cup olive oil
4 cloves garlic, minced
Juice and zest of 2 lemons
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, for garnish
Optional: lemon slices, for serving


Instructions

Step 1: Make the Marinade
In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.

The mixture should smell bright and fragrant, with little bits of zest and herbs suspended in the oil.

Step 2: Prepare the Slow Cooker
Place the chicken breasts in the base of the slow cooker in a single layer.

Pour the lemon-garlic marinade over the top, making sure each piece is coated evenly.

Use a spoon to gently move the chicken if needed, allowing the marinade to reach underneath.

Step 3: Cook Low and Slow
Cover the slow cooker with the lid and cook on low for 6–7 hours or high for 3–4 hours.

You’ll know it’s ready when the chicken is fork-tender and has absorbed the flavors of the sauce.

Step 4: Finish and Garnish
Once cooked, transfer the chicken to a serving dish and spoon some of the pan sauce over the top.

Sprinkle with freshly chopped parsley and garnish with lemon slices if desired.

Serve warm with rice, couscous, roasted potatoes, or a fresh green salad.
