Description

When I created this version of Strawberry Cottage Cheese Mousse, I was searching for something creamy, light, and high in protein — a feel-good dessert that could also double as a snack or breakfast


Ingredients

Scale

1 cup cottage cheese
1/2 cup Greek yogurt
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1/2 cup fresh strawberries, chopped
1/2 teaspoon lemon zest
1 tablespoon chia seeds (optional, for added thickness)
Fresh mint leaves and extra strawberries for garnish


Instructions

To Blend the Base
Step 1: Add the cottage cheese, Greek yogurt, honey (or maple syrup), and vanilla extract to a blender or food processor
Step 2: Blend on high speed for 1–2 minutes until smooth and creamy
Step 3: Scrape down the sides as needed to fully incorporate the ingredients
Step 4: Taste the mixture and adjust sweetness if needed

To Add Fruit and Flavor
Step 5: Add the chopped strawberries and lemon zest to the blender
Step 6: Blend again until the strawberries are fully incorporated and the mixture is pale pink and smooth
Step 7: If using chia seeds, stir them in by hand to avoid over-blending
Step 8: Let the mixture sit for 10–15 minutes to allow the chia to thicken the mousse

To Assemble and Chill
Step 9: Spoon the mousse evenly into serving bowls, ramekins, or jars
Step 10: Smooth the tops and cover with plastic wrap
Step 11: Chill in the refrigerator for at least 1 hour

To Serve
Step 12: Garnish each mousse with fresh strawberries and a sprig of mint before serving
Step 13: Serve chilled for the best texture and flavor
Step 14: Store leftovers in an airtight container in the refrigerator for up to 3 days
