When I first made this Summer Peach Salad, I was looking for a way to capture all the sweetness, freshness, and vibrancy of peak summer produce
Ingredients
For the Salad
4 ripe peaches, peeled, pitted, and diced
1 cup fresh blueberries
2 avocados, peeled, pitted, and diced
1/2 red onion, thinly sliced
1 cup chopped pecans
1/4 cup fresh mint leaves, chopped
8 ounces fresh mozzarella cheese pearls
4 cups chopped romaine lettuce
For the Balsamic Vinaigrette
3 tablespoons white balsamic vinegar
1/3 cup olive oil
2 teaspoons Dijon mustard
1/2 teaspoon onion powder
1/2 teaspoon granulated sugar
Instructions
Step 1: In a small bowl, whisk together the white balsamic vinegar, olive oil, Dijon mustard, onion powder, and granulated sugar until smooth and well combined
Step 2: In a large salad bowl, combine the diced peaches, blueberries, diced avocado, thinly sliced red onion, chopped pecans, chopped mint leaves, mozzarella pearls, and chopped romaine lettuce
Step 3: Drizzle the prepared vinaigrette over the salad ingredients
Step 4: Gently toss everything together until evenly coated, being careful not to mash the delicate fruits and avocado
Step 5: Taste and adjust seasoning if needed, adding a sprinkle of salt, extra mint, or an additional splash of vinaigrette
Step 6: Serve immediately for the freshest flavor and best texture
