Description

When I first made this simple Tomato Salad, I was looking for a way to celebrate the juicy, flavorful tomatoes of late summer


Ingredients

Scale

1 small or 1/2 medium red onion, thinly sliced into half-moons
1 1/2 pounds heirloom tomatoes (about 3 medium tomatoes)
1/4 cup packed fresh herbs (basil, cilantro, dill, parsley, or a combination), coarsely chopped
2 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper


Instructions

Step 1: Place the thinly sliced red onion in a small bowl and cover with cold water

Step 2: Let the onion soak while preparing the other ingredients, about 10 minutes

Step 3: Core the heirloom tomatoes and slice them into 1/2-inch-thick half-moons

Step 4: Place the sliced tomatoes into a large mixing bowl

Step 5: Coarsely chop the fresh herbs and add them to the bowl with the tomatoes

Step 6: Drain the soaked onions and add them to the tomato mixture

Step 7: Drizzle the olive oil and red wine vinegar over the salad

Step 8: Sprinkle with kosher salt and freshly ground black pepper

Step 9: Gently toss everything together until well combined, being careful not to mash the tomatoes

Step 10: Let the salad stand for at least 10 to 30 minutes before serving to allow the flavors to meld

Step 11: Taste and adjust seasoning with additional salt, pepper, vinegar, or oil if needed
