Description

These Gooey Cinnamon Cream Cheese Muffins are soft, sweet, and filled with a creamy center. Topped with cinnamon sugar and optionally drizzled with white chocolate, they’re the perfect cozy treat for breakfast or dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tbsp cinnamon sugar mixture (for topping)
  • Optional: 1/4 cup white chocolate, melted (for drizzle)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tray with paper liners.
  2. In a large bowl, combine flour, granulated sugar, baking powder, salt, and ground cinnamon. Mix well.
  3. In a separate bowl, whisk together melted butter, milk, eggs, and vanilla extract until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. In a small bowl, mix cream cheese and powdered sugar until smooth to form the filling.
  6. Fill each muffin liner halfway with batter, add a dollop of cream cheese filling, and cover with more batter.
  7. Sprinkle the tops with the cinnamon sugar mixture.
  8. Bake for 18–20 minutes, or until golden and a toothpick inserted into the muffin (not the filling) comes out clean.
  9. Let muffins cool in the tin for a few minutes, then transfer to a wire rack.
  10. Drizzle with melted white chocolate if desired. Serve warm or at room temperature.

Notes

  • Ensure cream cheese is fully softened for a smooth filling.
  • Do not overmix the batter to keep muffins tender.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat briefly in the microwave for a warm, gooey center.
  • You can customize with chopped nuts or a caramel drizzle instead of white chocolate.
