Ingredients

Scale
  • 3 large eggs
  • ½ cup oil
  • ¾ cup water
  • ¼ cup maraschino cherry juice

  • 1 box vanilla cake mix
  • 16 maraschino cherries, cut into quarters
  • 4 ounces (½ block) cream cheese, softened
  • â…“ cup salted butter, softened
  • 2 cups powdered sugar
  • ½ teaspoon almond extract (for frosting)
  • 1 tablespoon maraschino cherry juice (for frosting)

Instructions

  2. In a large bowl, mix together the eggs, oil, water, maraschino cherry juice, and almond extract using a stand or hand mixer.

  4. Gently fold in the quartered maraschino cherries.
  5. Pour the batter into the prepared baking dish and bake for 30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool completely before frosting.
  7. To make the frosting, mix the softened cream cheese and butter until smooth.
  8. Add the powdered sugar gradually, mixing on low to avoid splattering.

  10. Spread the frosting evenly over the cooled cake.
  11. Top individual slices with extra maraschino cherries if desired.
