Instructions
- Preheat oven to 375°F (190°C) and lightly grease an 8×8-inch baking dish.
- In a bowl, combine cherries, sugar, cornstarch, and vanilla. Add lemon zest or almond extract if using. Toss to coat and pour into the prepared dish.
- In a separate bowl, whisk flour, sugar, baking powder, and salt. Stir in melted butter and milk until smooth.
- Drop spoonfuls of topping over the cherries and gently spread. Optional: sprinkle cinnamon or coarse sugar on top.
- Bake for 35–45 minutes until golden and bubbly. Tent with foil if browning too quickly.
