  • Vegetable oil for frying
  • 1/3 cup granulated sugar (for coating)

Instructions

  1. In a medium bowl, beat cream cheese, sour cream, sugar, and vanilla until smooth (about 90 seconds). Gently fold in diced strawberries with a spatula.
  2. Lay one tortilla on a flat surface. Spoon about 1/3 cup of filling in a horizontal line near the bottom third. Fold the sides in and roll up tightly like a burrito. Secure with toothpicks. Repeat with remaining tortillas.
  3. Mix 1/3 cup sugar and 1 tablespoon cinnamon in a shallow dish for coating. Set aside.
  4. Heat 2–2 1/2 inches of oil in a heavy pan to 360°F (182°C). Fry chimichangas two at a time, seam-side down first, for 2–3 minutes total, turning once until golden brown.
  5. Transfer to paper towels for 10 seconds, then immediately roll in cinnamon-sugar mixture to coat all sides. Place on wire rack to set.
  6. Remove toothpicks, slice diagonally, and serve warm with fresh strawberries or chilled for firmer filling.
