Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and creamy.
- Add the egg and vanilla extract, mixing on medium speed until fully incorporated.
- In another bowl, whisk together flour, baking soda, salt, and strawberry gelatin. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
- Fold in chopped strawberries if using.
- In a small bowl, mix crushed graham crackers, sugar, and melted butter until crumbly. Add sprinkles if desired.
- Drop rounded spoonfuls of dough onto the baking sheet, about 2 inches apart.
- Sprinkle each cookie generously with the graham cracker topping.
- Bake for 10–12 minutes, or until the edges are lightly golden and the centers are set.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- Fresh strawberries add moisture and a burst of real fruit flavor but are optional.
