Ingredients

  • 200 g long-grain white rice, uncooked
  • 720 ml low-sodium beef broth
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 45 g butter
  • 120 g shredded cheddar cheese
  • 50 g grated Parmesan cheese
  • 120 ml milk
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Heat 15 g of butter in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  2. Add ground beef, breaking it apart as it cooks, until browned. Drain excess fat if necessary.
  3. Add minced garlic and cook for an additional minute until fragrant.
  4. Stir in uncooked rice, beef broth, Italian seasoning, salt, and pepper. Mix well.
  5. Bring to a gentle boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and most liquid is absorbed.
  6. In a small saucepan, melt the remaining 30 g butter over low heat. Add milk, cheddar cheese, and Parmesan cheese, stirring constantly until smooth.
  7. Pour the cheese sauce into the skillet with the beef and rice mixture. Stir thoroughly to combine.
  8. Cook uncovered for 2-3 minutes to meld flavors. Garnish with chopped parsley if desired and serve hot.
