Description

  • 1 ¾ cups cold milk
  • ½ cup evaporated milk
  • ½ cup granulated sugar
  • ¼ cup unsalted butter
  • 1 large egg yolk, lightly beaten
  • ½ teaspoon vanilla extract
  • â…” cup sweetened shredded coconut
  • ½ cup chopped pecans

Instructions

  1. In a medium bowl, whisk together the chocolate pudding mix and cold milk for about 2 minutes until smooth and thick. Let sit for 5 minutes to fully thicken.
  2. Pour the pudding into the prepared crust and spread evenly. Chill in the fridge for at least 30 minutes.
  3. In a medium saucepan, combine evaporated milk, sugar, butter, and the beaten egg yolk. Cook over medium heat, stirring constantly until the mixture thickens and bubbles, about 7–10 minutes. Continue stirring for 1 minute after it starts boiling.
  4. Remove from heat and stir in vanilla extract, coconut, and pecans. Let cool for 10–15 minutes, stirring occasionally.
  5. Spoon the topping over the chilled pudding layer and spread evenly.
  6. Return the pie to the fridge and chill for 2–3 hours until firm. Slice and serve. Optional: top with whipped cream, chocolate curls, or extra pecans.
