- 1 (4-serving size) package instant chocolate pudding mix
- 1 ¾ cups cold milk
- ½ cup evaporated milk
- ½ cup granulated sugar
- ¼ cup unsalted butter
- 1 large egg yolk, lightly beaten
- ½ teaspoon vanilla extract

- ½ cup chopped pecans
Instructions
- In a medium bowl, whisk together the chocolate pudding mix and cold milk for about 2 minutes until smooth and thick. Let sit for 5 minutes to fully thicken.
- Pour the pudding into the prepared crust and spread evenly. Chill in the fridge for at least 30 minutes.
- In a medium saucepan, combine evaporated milk, sugar, butter, and the beaten egg yolk. Cook over medium heat, stirring constantly until the mixture thickens and bubbles, about 7–10 minutes. Continue stirring for 1 minute after it starts boiling.
- Remove from heat and stir in vanilla extract, coconut, and pecans. Let cool for 10–15 minutes, stirring occasionally.
- Spoon the topping over the chilled pudding layer and spread evenly.
- Return the pie to the fridge and chill for 2–3 hours until firm. Slice and serve. Optional: top with whipped cream, chocolate curls, or extra pecans.
