These Peanut Butter Lunch Lady Cookie Bars are soft, chewy, and loaded with peanut butter flavor. Finished with a sweet glaze, they make the perfect nostalgic treat for any occasion.

- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1 cup creamy peanut butter
- 2 large eggs
- 2½ teaspoons vanilla extract
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup powdered sugar
- 2–3 tablespoons milk (or cream)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
- In a large bowl, cream the butter, granulated sugar, and brown sugar together until fluffy (about 3–4 minutes).
- Add the peanut butter and mix until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread the dough evenly in the prepared pan.
- Bake for 20–25 minutes, until the edges are golden and the center is set. Let cool completely in the pan.
- In a small bowl, whisk together powdered sugar, milk (or cream), and vanilla until smooth. Adjust the milk for desired glaze consistency.
- Spread the glaze over the cooled bars. Slice and serve.
Notes
- Use room temperature ingredients for better mixing.
- For a thicker glaze, use less milk; for a thinner glaze, add more.
- Don’t overbake to keep the bars soft and chewy.
- You can substitute crunchy peanut butter for extra texture.
- Store in an airtight container at room temperature for up to 4 days.
