Description

These Peanut Butter Lunch Lady Cookie Bars are soft, chewy, and loaded with peanut butter flavor. Finished with a sweet glaze, they make the perfect nostalgic treat for any occasion.


Ingredients

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2½ teaspoons vanilla extract
  • 1½ cups all-purpose flour

  • ½ teaspoon salt
  • 1 cup powdered sugar
  • 23 tablespoons milk (or cream)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a large bowl, cream the butter, granulated sugar, and brown sugar together until fluffy (about 3–4 minutes).
  3. Add the peanut butter and mix until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Spread the dough evenly in the prepared pan.
  7. Bake for 20–25 minutes, until the edges are golden and the center is set. Let cool completely in the pan.
  8. In a small bowl, whisk together powdered sugar, milk (or cream), and vanilla until smooth. Adjust the milk for desired glaze consistency.
  9. Spread the glaze over the cooled bars. Slice and serve.
