Description

These pepperoni pizza quesadillas combine the gooey cheese, tangy marinara, and spicy pepperoni of classic pizza with the crispy golden crunch of a quesadilla. Perfect for a quick lunch, dinner, or party snack!

  • ¼ cup yellow onion, finely diced
  • ¼ to ½ cup bell peppers, diced (any color)
  • ½ teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • Salt and pepper to taste
  • 8 medium flour tortillas (8-inch)
  • ½ to 1 cup marinara or pizza sauce
  • 1 cup freshly grated mozzarella cheese
  • 4 to 6 oz sliced pepperoni

Instructions

  1. Heat olive oil or butter in a skillet over medium-high heat. Add diced onions, bell peppers, Italian seasoning, basil, salt, and pepper.
  2. Sauté the vegetables for 3-4 minutes until soft and fragrant. Remove from heat and set aside.
  3. Lay out 4 tortillas and spread a generous layer of marinara or pizza sauce on each, leaving a small border.
  4. Evenly divide sautéed vegetables, pepperoni slices, and mozzarella cheese among the 4 tortillas.
  5. Top each filled tortilla with another tortilla and press down gently to secure.
  6. Heat the skillet over medium heat and cook one quesadilla for 2-3 minutes until the bottom is golden and crispy.
  7. Flip the quesadilla and cook the other side for another 2-3 minutes until golden and cheese is melted.
  8. Repeat with the remaining quesadillas. Let cool for a minute, then slice into wedges and serve hot.
