Ingredients
Scale
- 2 pounds strawberries
- 1 pint blueberries
- 1 (8-oz.) package cream cheese, at room temperature
- 1 teaspoon vanilla extract
- Pinch of salt
- 2 cups powdered sugar
- 1 (16-oz.) tub cool whip, thawed
- 4 cups mini marshmallows
Instructions
- Remove the stems from the strawberries and cut them into small pieces similar in size to the mini marshmallows. Set aside.
- In a large bowl, beat together the cream cheese, vanilla extract, salt, and powdered sugar until smooth and creamy.
- Add half of the thawed cool whip to the cream cheese mixture and stir until smooth. Gently fold in the remaining cool whip.
- Fold in the prepared strawberries, blueberries, and mini marshmallows carefully to avoid crushing the fruit.
- Transfer the salad into a resealable container and refrigerate until ready to serve.
Notes
- Ensure berries are completely dry before folding them in to prevent excess moisture.
- Prepare and serve the salad the same day for the freshest texture.
- You can add raspberries or blackberries for additional flavor and color.
- Use a hand mixer for a smoother cream cheese mixture.
- For a lighter version, substitute low-fat cream cheese and light whipped topping.
