  • 1 tablespoon unsalted butter (for cooking)

Instructions

  1. Cook the breakfast sausage links according to package instructions. Set aside.
  2. Trim the crusts off the bread slices. Flatten each slice with a rolling pin.
  3. In a shallow dish, whisk together eggs, milk, vanilla extract, and ground cinnamon to make the batter.
  4. Place one sausage link at the end of each flattened bread slice. Roll the bread tightly around the sausage and press to seal.
  5. Heat a skillet over medium heat and melt 1 tablespoon butter. Dip each roll-up in the egg mixture, coating all sides.
  6. Place roll-ups seam-side down in the skillet. Cook, turning occasionally, until all sides are golden brown, about 3–4 minutes per side.
