Description
A nutritious and easy low-carb meal that comes together in just 5 minutes of prep. This savory bake combines tender steamed broccoli with a protein-rich batter of eggs and cottage cheese, finished with a melty cheese topping. It is perfect for a quick breakfast, a light lunch, or a healthy side dish.
Ingredients
Scale
- 2 cups steamed broccoli florets, chopped if large
- 1 cup cottage cheese
- 2 large eggs
- ½ cup shredded cheese (cheddar, mozzarella, or your favorite), divided
- ¼ cup almond flour (optional, for texture)
- Salt and pepper, to taste
- Optional: 1/2 teaspoon garlic powder or onion powder
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a small baking dish (such as an 8×8 inch pan or a pie dish).
- In a large bowl, whisk together the cottage cheese, eggs, salt, pepper, and optional spices (garlic or onion powder) until well combined.
- Fold in the steamed broccoli, almond flour (if using), and half of the shredded cheese until evenly distributed.
- Pour the mixture into the prepared baking dish and smooth the top. Sprinkle the remaining cheese over the casserole.
- Bake for 25–30 minutes, or until the center is set and the top is golden brown.
- Let the bake cool for 5 to 10 minutes to firm up slightly before slicing and serving warm.
Notes
- Broccoli Tip: Ensure the steamed broccoli is drained very well to prevent the casserole from becoming watery. You can also use thawed frozen broccoli, squeezed dry.
- Texture: If you prefer a smoother texture, you can blend the cottage cheese and eggs before adding the broccoli.
- Dietary: This dish is naturally gluten-free (especially with almond flour) and keto-friendly.
