Description

A nutritious and easy low-carb meal that comes together in just 5 minutes of prep. This savory bake combines tender steamed broccoli with a protein-rich batter of eggs and cottage cheese, finished with a melty cheese topping. It is perfect for a quick breakfast, a light lunch, or a healthy side dish.

Ingredients

Scale
  • 2 cups steamed broccoli florets, chopped if large
  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup shredded cheese (cheddar, mozzarella, or your favorite), divided
  • ¼ cup almond flour (optional, for texture)
  • Salt and pepper, to taste
  • Optional: 1/2 teaspoon garlic powder or onion powder

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a small baking dish (such as an 8×8 inch pan or a pie dish).
  2. In a large bowl, whisk together the cottage cheese, eggs, salt, pepper, and optional spices (garlic or onion powder) until well combined.
  3. Fold in the steamed broccoli, almond flour (if using), and half of the shredded cheese until evenly distributed.
  4. Pour the mixture into the prepared baking dish and smooth the top. Sprinkle the remaining cheese over the casserole.
  5. Bake for 25–30 minutes, or until the center is set and the top is golden brown.
  6. Let the bake cool for 5 to 10 minutes to firm up slightly before slicing and serving warm.

Notes

  • Broccoli Tip: Ensure the steamed broccoli is drained very well to prevent the casserole from becoming watery. You can also use thawed frozen broccoli, squeezed dry.
  • Texture: If you prefer a smoother texture, you can blend the cottage cheese and eggs before adding the broccoli.
  • Dietary: This dish is naturally gluten-free (especially with almond flour) and keto-friendly.
