Ingredients

Scale

For the Cookie Base:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • Pinch of salt

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon sour cream

For the Salted Caramel Drizzle:

  • Store-bought or homemade salted caramel sauce (to taste)

For the Cheesecake Frosting (Optional):

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk, as needed

Instructions

1. Prepare the Cookie Dough:

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually mix in the flour, baking soda, and a pinch of salt. Stir until the dough is just combined.

2. Prepare the Cheesecake Filling:

  1. In a separate bowl, beat the cream cheese until smooth.
  2. Add powdered sugar, vanilla extract, and sour cream. Mix until well combined and creamy.

3. Assemble the Cookies:

  1. Scoop the cookie dough into large balls and place them on the prepared baking sheet.
  2. Using the back of a spoon or your thumb, create a small well in the center of each dough ball.
  3. Fill each well with the cheesecake filling, ensuring it doesn’t overflow.

4. Bake the Cookies:

  1. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set.
  2. Remove the cookies from the oven and let them cool completely on a wire rack.

5. Add Salted Caramel Drizzle:

  1. Once the cookies have cooled, drizzle the salted caramel sauce generously over each cookie.

6. (Optional) Prepare and Add Cheesecake Frosting:

  1. Beat the softened cream cheese and butter together until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing well.
  3. Add milk, 1 tablespoon at a time, until the frosting reaches a spreadable consistency.
  4. Pipe or spread the frosting onto the cookies before adding the salted caramel drizzle for an extra indulgent touch.
