Garlic Butter Steak Bites and Potatoes Recipe

  • 1 lb steak (ribeye, sirloin, or filet mignon), cut into 1-inch cubes
  • 1 lb Yukon Gold or red potatoes, cubed
  • 3 tbsp olive oil, divided
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp paprika
  • 1 tsp salt, divided
  • ½ tsp black pepper, divided

Instructions

  1. Prepare the Potatoes:
    • Preheat the oven to 400°F.
    • In a large bowl, toss the cubed potatoes with 2 tbsp olive oil, paprika, ½ tsp salt, and ¼ tsp black pepper.
    • Spread the potatoes evenly on a baking sheet and roast for 20-25 minutes, or until tender and crispy.
  2. Cook the Steak Bites:
    • Heat 1 tbsp olive oil in a large skillet over medium-high heat.
    • Season the steak cubes with ½ tsp salt and ¼ tsp black pepper.
    • Sear the steak bites in the skillet for 2-3 minutes per side until browned. Remove and set aside.
  3. Make the Garlic Butter Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant. Stir in the chopped parsley.
  4. Combine and Serve:
    • Add the roasted potatoes and seared steak bites back into the skillet. Toss everything to coat in the garlic butter sauce.
    • Serve hot with additional parsley for garnish.
