- Meatballs:
- 1 lb Ground beef
- 1 lb Ground pork
- 1 cup Breadcrumbs
- 2 Eggs
- Sauce:
- 1 cup Sweet chili sauce
- 1/4 cup Soy sauce
- 2 tbsp Rice vinegar
- 2 tbsp Brown sugar
- 3 cloves Garlic, minced
- 1 tbsp Ginger, grated
- 1/2 tsp Red pepper flakes
- Garnish:
- 1/4 cup Cilantro, chopped
- 1/4 cup Green onions, sliced
Instructions
- Meatballs: Combine ground beef, pork, breadcrumbs, and eggs in a bowl. Mix well. Shape into 1-1.5 inch meatballs. (Optional: Brown meatballs in a skillet with oil.)
- Sauce: Whisk together sweet chili sauce, soy sauce, rice vinegar, brown sugar, garlic, ginger, and red pepper flakes.
- Crockpot: Place meatballs in the crockpot. Pour sauce over them.
- Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until meatballs are cooked through. (Optional: Thicken sauce with cornstarch slurry during the last 30 minutes if desired.)
- Serve: Garnish with cilantro and green onions.
