  • Meatballs:
    • 1 lb Ground beef
    • 1 lb Ground pork
    • 1 cup Breadcrumbs
    • 2 Eggs
  • Sauce:
    • 1 cup Sweet chili sauce
    • 1/4 cup Soy sauce
    • 2 tbsp Rice vinegar
    • 2 tbsp Brown sugar
    • 3 cloves Garlic, minced
    • 1 tbsp Ginger, grated
    • 1/2 tsp Red pepper flakes
  • Garnish:
    • 1/4 cup Cilantro, chopped
    • 1/4 cup Green onions, sliced

Instructions

  1. Meatballs: Combine ground beef, pork, breadcrumbs, and eggs in a bowl. Mix well. Shape into 1-1.5 inch meatballs. (Optional: Brown meatballs in a skillet with oil.)
  2. Sauce: Whisk together sweet chili sauce, soy sauce, rice vinegar, brown sugar, garlic, ginger, and red pepper flakes.
  3. Crockpot: Place meatballs in the crockpot. Pour sauce over them.
  4. Cook: Cover and cook on low for 4-6 hours or on high for 2-3 hours, until meatballs are cooked through. (Optional: Thicken sauce with cornstarch slurry during the last 30 minutes if desired.)
  5. Serve: Garnish with cilantro and green onions.
