Description

This recipe came from a desire to create a festive and flavorful cookie that combines two classic favorites: mint and chocolate. It’s a perfect holiday treat

Ingredients

Scale

  • 10 Tablespoons butter, room temperature
  • 1 cup powdered sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 teaspoon peppermint extract (adjust to taste)
  • 612 drops green food coloring (optional)
  • 2 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon Kosher salt
  • 24 chocolate kisses

Instructions

Let’s walk through the steps of making these delicious Mint Chocolate Kiss Blossom Cookies:

First, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a baking sheet with parchment paper or a silicone baking mat, or spray it with nonstick baking spray.

In a large mixing bowl, cream together the room temperature butter and powdered sugar until light and fluffy. This should take about 2-3 minutes.

Add the whole egg, egg yolk, peppermint extract, and green food coloring (if using). Start with 6 drops of food coloring and gradually add more until you reach your desired color.

Mix until everything is well combined and smooth. Scrape down the sides of the bowl as needed. Make sure all is incorporated.

In a separate bowl, whisk together the flour, baking powder, and salt. This ensures that the dry ingredients are evenly distributed.

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.

Using a small cookie scoop or a spoon, roll the cookie dough into 1-inch balls. Place the dough balls onto the prepared baking sheet, leaving a little space between each cookie.

Bake for 7-9 minutes, or until the edges of the cookies are lightly golden brown. I bake mine for 8 minutes, and they turn out perfectly.

Remove the cookies from the oven and let them sit on the baking sheet for about 2 minutes. This allows them to set slightly.

Gently press a chocolate kiss into the center of each cookie. The cookies will be soft, so be careful not to press too hard.

Transfer the cookies to a wire rack to cool completely. This prevents them from becoming soggy on the bottom.
