Description

This Pancake Sausage Casserole is a hearty and satisfying breakfast dish made by layering fluffy pancakes and savory sausage, drizzled with sweet maple syrup. Perfect for brunch gatherings or a weekend treat.

Ingredients

Scale
  • 2 cups pancake mix
  • 1 1/4 cups milk
  • 1 egg
  • 1 lb breakfast sausage
  • 1/2 cup maple syrup (plus more for serving)
  • Butter or oil for greasing the skillet

Instructions

  1. In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain excess fat and set aside.
  2. In a large bowl, whisk together the pancake mix, milk, and egg until smooth. Let sit for 5 minutes to slightly thicken.
  3. Heat a lightly oiled skillet or griddle over medium heat. Pour batter to make small to medium pancakes. Cook until bubbles form and edges are set, then flip and cook until golden brown. Repeat to make at least 6 pancakes.
  4. Grease a baking dish. Layer pancake, sausage, and drizzle with maple syrup. Repeat until all ingredients are used, finishing with a pancake on top. Optionally drizzle more syrup over the top.
  5. Preheat oven to 350°F (175°C). Bake the casserole for 10–15 minutes until warmed through and flavors meld.
  6. Slice and serve warm with extra maple syrup.

Notes

  • Use pre-cooked sausage links or patties for faster preparation.
  • For a sweeter touch, add a sprinkle of brown sugar between the layers.
  • Make it ahead and reheat in the oven for an easy brunch option.
  • Substitute turkey sausage for a lighter version.
  • Add shredded cheese between layers for a savory twist.
