Ingredients
Scale
- 2 cups peaches, peeled and diced
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract (for peaches)
- 1 tablespoon cornstarch (optional)
- 1 tablespoon water (if using cornstarch)
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for cheesecake filling)
- 10 egg roll wrappers
- Vegetable oil for frying
- 1/4 cup cinnamon sugar (3 tbsp sugar + 1 tbsp cinnamon)
Instructions
- Melt butter in a skillet over medium heat. Add diced peaches, brown sugar, cinnamon, and vanilla. Cook for 5–7 minutes until peaches are soft.
- If desired, mix cornstarch with water and add to the peach mixture. Cook for 1–2 more minutes until thickened. Remove from heat and let cool.
- In a bowl, beat the cream cheese, powdered sugar, and vanilla until smooth and creamy.
- Place an egg roll wrapper in a diamond shape. Add 1 tablespoon of cheesecake filling and 1 tablespoon of peach filling to the center.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the edge with a little water.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Fry the rolls in batches for 2–3 minutes until golden brown.
- Remove and immediately roll the hot rolls in the cinnamon sugar to coat.
- Serve warm and enjoy!
Notes
- Make sure oil is at the right temperature to avoid greasy rolls.
- Let the peach filling cool completely before assembling to prevent wrappers from becoming soggy.
- Use fresh, ripe peaches for best flavor, but canned peaches can work in a pinch (drained well).
- Serve with whipped cream or ice cream for an extra indulgent treat.
- Best eaten the same day to maintain crispiness.
