  • 1 pound lean ground beef
  • 46 medium Russet potatoes
  • 1 packet (1 oz) taco seasoning
  • ½ cup water
  • 1 cup sharp cheddar cheese, shredded
  • ½ cup sour cream
  • ¼ cup green onions, chopped
  • ½ cup fresh tomatoes, diced

Instructions

  1. Wash and scrub the Russet potatoes. Pierce them with a fork to allow steam to escape.
  2. Place the potatoes in a 400°F oven and bake for 45-50 minutes, or until fork-tender.
  3. While the potatoes bake, heat a large skillet over medium heat. Add ground beef and cook until browned and no longer pink, draining any excess grease.
  4. Stir in taco seasoning and water. Let the mixture simmer for 5 minutes, stirring occasionally, until thickened.
  5. When the potatoes are done, slice them open lengthwise and fluff the inside with a fork.
  6. Top each potato with seasoned beef, shredded cheddar cheese, sour cream, chopped green onions, and diced tomatoes.
